I don't have the Sam440ep board yet, but I do beleive that 512MB is soldered onto the board.
The onboard memory option has been removed, mainly for an economical reason, therefore you can use only the DIMM 100 slot, which means on the current Sam440ep board you can have max 512 Mb ram.
Every Sam440ep comes with a suitable 512 Mb DDR memory stick.
How did you get that you can put there 1GB in Sam?
There is written that there can be 512 soldered OR in as 512 module...
The description said memory on board, but the pic had a slot for memory, besides, depending how you read the description, you could sumize that it had both onboard and plugin memory.
I guess I now know for sure Sam440EP only supports up to 512MB Ram.

What about those of us who were lucky enough to buy a Sam with the 512 Mb of onboard RAM. Can we populate the DIMM slot and use all of the memory? If so, what is the total amount of memory that the Sam can use?

640 kilobytes should be enough for everyone, right?-)
512 MB is 2x the RAM size of my MicroA1 but if we actually start to get some applications for OS4 (image, video processing, office, fox) even 512 MB is consumed very quickly. FireFox 3 takes easily 200 MB alone!
Swapping sucks, every Windows/MacOS/Linux user knows that and puts more memory into his machine :)
